West African Chicken-Peanut Soup

(makes 12 servings)

 

4 Tbls. Oriental (dark) sesame oil

2 cups diced cooked chicken

1 cup chopped onions

1 Tbls. minced garlic

1 Tbls. curry powder

1 tsp. salt

1 tsp. black pepper

1/2 to 1 tsp.crushed red pepper flakes

6 cups chicken broth

1/2 cup tomato paste

1 15oz. can chopped stewed tomatoes

1/4 cup + 2 Tbls. of chunky peanut butter

 

In a large skillet, over medium heat, add the sesame oil. Then add the chicken, onion and garlic and saute until the onion is translucent. Add the remainder of the ingredients and heat thoroughly but don't boil. Serve while hot.
